Molly Brookfield-Paul
Chef/First Mate
Molly spent her childhood exploring the world with her family, gaining a deep appreciation for other cultures and often experiencing this through food. She began solo traveling in her twenties where she fell in love with South east Asia and Mediterranean cooking. Having learnt to cook, she continued to travel in her kitchen, experimenting with new and exciting recipes.
Driven by a love of travel, the ocean, and fine cuisine, she eventually found her way to the yachting world—a place where culinary creativity meets adventure. Molly brings global flavors, seasonal ingredients, and personalised menus to life for guests exploring some of the most beautiful destinations on earth. After a couple of summer seasons in the Mediterranean exploring Croatia, Greece and Sicily, Molly swapped the sea for the slopes and worked as a private chef in ski chalets in France. Whilst she loved learning to ski, the beach called again and Molly answered, bringing her to the beautiful British Virgin Islands.
As Molly begins her second season in the British Virgin Islands, she plans to continue creating exceptional dishes to wow guests. Off the boat, Molly looks forward to putting on her scuba gear and enjoying the wonderful underwater garden the Caribbean has to offer.
Every meal is an opportunity for Molly to tell a story, and every charter is a chance to elevate the experience through food. Whether provisioning in remote ports or designing menus around dietary needs and cultural preferences, she takes pride in being adaptable, resourceful, and always passionate about what she does. Molly can’t wait to welcome you onboard Triwing Carida and cook up a storm!
